Grilled chicken with pesto quinoa

Well, what I’m about to tell you is no secret…

This week has been a hectic one. I have recently started a full-time job (that I love), my first since arriving in Sydney. But with the positives of a steady routine come the negatives of a lot less time to play with in the day. I don’t know about you but I’ve also been spending a small fortune on lunches everyday. So here it is:

“Fail to prepare, prepare to fail”

For me, its time to get back into the swing of things and be a lot more organised with my food and money.

First step, naturally, is lunch. Here is a super tasty and really quick and easy lunch which you can prepare in bulk at the beginning of the week. This chicken and pesto quinoa is full to the brim with protein from the quinoa & chicken as well as being high in iron, calcium & vits B + K from the spinach. It makes the perfect healthy mid-day ‘pick me up’.

I like to make mine on a Sunday evening in preparation for the week. I can then open the fridge, grab a lunch and go. So here goes. This will make enough for four lunches, you will need:

For the pesto

    • 3 cups of basil leaves
    • 2 cloves garlic
    • 1/2 cup of pine nuts
    • 1 cup grated parmesan
    • 4-5 tbsp olive oil


For the rest

  • 500 ml gluten-free vegetable stock
  • 1 1/2 cups white or red quinoa
  • Zest of a lemon
  • 4 chicken free-range chicken breasts
  • 2 tsp coconut oil
  • 4 cups of spinach leaves

Firstly, go ahead and make your pesto. Add the basil, garlic, parmesan and olive oil to a food blender and blitz until it becomes a paste.

Meanwhile you can be cooking your quinoa in the vegetable stock, according to the packet instructions. Add the lemon zest and set aside.


Then chop the chicken into bite-sized pieces and cover with the coconut oil. Throw the chicken in a pan and cook through. Just before the end of the cooking phase add the spinach, to wilt.


Next combine the lemony quinoa and the pesto with the spinach & chicken mixture.DSC00485

Divide into four Tupperware containers and voilà; a whole week of lunches done in a mere 20 minutes. And not just any lunch; one that will keep your immune system, bones, blood and muscles healthy.
